California Apple-Spinach Salad



1 cup cored and diced California Granny Smith and Gala apples
1/4 cup sliced fresh mushrooms (optional)
1/4 cup sliced green onions, including tops
1 1/2 cups torn Bibb or butter lettuce
1 1/2 cups torn fresh spinach
6 slices bacon, cooked crisp and crumbled
1/4 cup crumbled feta or blue cheese


1/4 cup apple cider vinegar
1/3 cup vegetable oil
1 teaspoon Worcestershire sauce
1 clove garlic, minced
1/2 teaspoon sugar
1/4 teaspoon dried oregano leaves
dash of pepper


1 cup light brown sugar
3/4 cup quick-cooking rolled oats
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 cup (1 stick) butter, softened
5 California apples; peeled, cored and sliced


1. Preheat oven to 375°F. In small bowl, mix sugar, oats, flour, cinnamon and nutmeg together.
2. With fork or pastry blender, cut in butter until crumbly.
3. Slice apples into buttered 9x9x2" pan.
4. Sprinkle crumb mixture evenly on top.
5. Bake for 35 minutes or until apples are tender.

Makes 8 servings.
